I thought I posted a response here. I guess I forgot to hit submit. Anyway...

fedja's link is a great list of resources, but it is probably more than what you are looking for.

The proof of the Poincare Conjecture is written up in gory detail, together with a lot of background material, in Morgan and Tian's book, which you can find here.

Another good resource which is far less comprehensive but more approachable (and abbreviated) is Terry Tao's lecture notes.

Although it would take a lot of background and effort to understand the proof, a decent background in differential geometry and PDE is enough to learn quite a bit *about* the proof.
