Intermediate Geometry
I know there isn't going to be a intermediate geo book... but there is a course.
Will AoPS ever publish a book at that level?
Any suggestions for a book of intermediate geo?

Maybe, but Ruscyk said before that it will be a long time (at least till 2011)

It will be a long while before I write another geometry book. In our bookstore, in the Olympiad section, there's a book from the UKMT that would probably be a good fit for you.

What is the difficulty of the problems in that book? (Medium AIME, Hard AMC12, Easy USAMO, etc.)

So, would I be able to answer most of the geometry AIME problems if I get Plane Euclidean Geometry and thoroughly go through it?

I don't know. I haven't worked with the book enough to know how well it correlates to AIME. It would very likely expand your geometric horizons.
